High Protein Chipotle Burrito Meal Prep
8 meal-prep burritos packed with creamy chipotle beef, smoky crema, and low-cal tortillas. Big flavor, lean macros — built for the week ahead.
Ingredients
- 2 lbs lean ground beef (93/7)
- 1 packet taco seasoning (or 2 tbsp homemade)
- ¼ cup tomato paste
- ½ cup low-sodium beef broth
- ¼ cup reduced-fat cream cheese
- ½ cup non-fat Greek yogurt
- 1 tbsp light mayonnaise
- 1 chipotle pepper in adobo
- 1 tsp lime juice
- 1 tsp honey (optional)
- ½ tsp smoked paprika
- ½ tsp garlic powder
- 8 large low-calorie tortillas (e.g. Ole Xtreme Wellness)
- 1 cup shredded low-fat cheese
Beef Filling
Brown 2 lbs lean ground beef (93/7) in a large skillet over medium-high heat. Drain any excess fat. Add 1 packet taco seasoning (or 2 tbsp homemade mix: chili powder, cumin, garlic powder, onion powder), ¼ cup tomato paste, and ½ cup low-sodium beef broth (or water). Stir well and simmer 3–4 minutes until the liquid is mostly absorbed. Remove from heat and stir in ¼ cup reduced-fat cream cheese until fully melted and creamy.
Smoky Chipotle Crema
Whisk together: ½ cup non-fat Greek yogurt, 1 tbsp light mayo, 1 chipotle pepper in adobo (finely chopped), 1 tsp lime juice, 1 tsp honey (optional), ½ tsp smoked paprika, ½ tsp garlic powder, pinch of salt. Taste and adjust heat/lime. Refrigerate until assembling — it thickens as it sits.
Assemble the Burritos
Warm 8 large low-calorie tortillas (Ole Xtreme Wellness or similar) so they roll without cracking. Lay flat and divide the beef filling evenly among all 8. Add a drizzle of chipotle crema and a sprinkle of shredded low-fat cheese (1 cup total). Add any optional fillings: rice, black beans, diced onion, corn, or hot sauce.
Roll & Wrap
Fold in both sides, then roll from the bottom up tightly. For meal prep: wrap each burrito individually in foil or plastic wrap. Store in the fridge for up to 4 days, or freeze for up to 2 months. To reheat from frozen: thaw overnight, then microwave 2–3 minutes or crisp in a skillet over medium heat.
Meal Prep Tips
Keep the crema separate if storing — drizzle on just before eating to prevent sogginess. Rice, black beans, corn, and diced onion all make great additions without much extra prep time. The cream cheese in the beef filling is what keeps the meat moist and creamy even after reheating — don’t skip it.
