Tacos
Mexican Adobo Smoked Tilapia
Tilapia is excellent for fish tacos. Chipotle-orange marinade, then smoky and flaked over corn tortillas.
Time: 30 min marinade + 35 min smoke
Temp: 275°F / 135°C
Wood: Mesquite or Apple
Ingredients
- Tilapia fillets
- ¼ cup olive oil
- 2 oranges (juice)
- 2 limes (juice)
- 2 garlic cloves
- 2 tbsp chipotle peppers in adobo
- Cumin
- Corn tortillas
- Cabbage slaw
- Crema
Marinade
Mix ¼ cup olive oil, juice of 2 oranges, juice of 2 limes, 2 minced garlic cloves, 2 tbsp chipotle peppers in adobo (minced), and a pinch of cumin.
Brine
Marinate the fillets in this mixture for 20–30 minutes.
Smoke
Smoke at 275°F (135°C). Once done, flake the fish and serve with corn tortillas, cabbage slaw, and crema.
