TJ’s Focaccia Turkey Sando

Sun-dried tomato focaccia toasted and loaded with pesto mayo, deli turkey, juicy tomato, red onion, and greens. Simple enough for Tuesday, good enough to crave on repeat.

Time: 20 minutes
Temp: 400°F (toast)

Ingredients

  • 1 loaf TJ’s sun-dried tomato focaccia (or any focaccia)
  • 7 oz deli turkey
  • 1 large tomato
  • Handful of greens (sprouts, microgreens, or spinach)
  • A few slices red onion
  • ¼ cup mayonnaise
  • ¼ cup pesto (TJ’s or Costco)
  • Optional: bacon, mozzarella, provolone, avocado

Pesto Mayo

Mix together ¼ cup mayo and ¼ cup pesto (TJ’s or Costco brand pesto works great) in a small bowl. That’s it — this is the secret weapon of the whole sandwich.

Toast the Focaccia

Preheat oven to 400°F. Toast 1 loaf of TJ’s sun-dried tomato focaccia (or any focaccia) for 5–8 minutes. It’s just better toasted. Any dense, flavored focaccia works — roasted tomato, herb, or plain all do the job.

Slice

With the loaf flat on a cutting board, turn your serrated knife sideways and slice horizontally through the center of the entire loaf. Set the top piece aside crumbly-side up — don’t flip it or you’ll lose those good crumbles.

Layer & Assemble

Spread pesto mayo on the bottom half. Layer on: one 7-oz package of deli turkey, thinly sliced tomato, a handful of greens (sprouts, microgreens, or spinach), and a few slices of thin red onion. Dollop a bit more pesto mayo directly on top of the greens — this way you don’t have to flip the top piece to spread it. Gently press the top piece back on.

Cut & Serve

Use a large knife to cut down the center and across 3 times for 6 pieces. Optional add-ons: bacon, mozzarella, provolone, avocado, or balsamic. Leftovers go soggy fast — if you’re not eating the whole loaf, just cut off a chunk and build a smaller sandwich.
